This week, I attended a preview dinner at Bellwether, a bright, new 60-seat restaurant in Long Island City from long-time resident Matthew McCormick and chef Preston Madson (Freemans, Jams ar 1 Hotel Central Park). As a Queens kid myself, I always remark at how much LIC has changed in recent years, in the skyscraper and food department, and was happy to see a spot try to take things to the next level. The interiors are eye-catching (note the white brick and the green wall), but chef Madson steals the show, handling both food and dessert programs. The menu is very sharable and highlights plenty of local ingredients. My favorites: grilled whole fava beans, beef carpaccio served with a sculptural-looking potato chip, cornish hen with chermoula, and grappa-infused tangerine to close. – Daniel, Gentedimontagna editor

Oh what I would do for a few hours of downtime on Copenhagen's new floating island. The 20-square-meter platform from Australian architect Marshall Blecher and Danish designer Magnus Maarbjerg is the first in a series of experimental public spaces opening up in the city's harbor. Elegant Freedom Cycle Bridge (Cyklomost Slobody) begins in Slovakia, extends high over the river Morava, and leads to open, serene Austrian fields and Schlosshof Castle. The bridge leads you practically through the tree canopy. Once on top, you can have fun jumping from one country to another across the thin line painted on the green tarmac. Rediscovering the Land in Le Marche, Italy

March marked the first Earthy Retreat, a gathering organized by Archivio Madre that's focused on experiencing the land in a more conscious way. The retreat took place at Villa Tereze, a vacation home and artist residency nestled in the hills close to Pergola, Italy, and featured an international chef challenged to use local raw materials. We went truffle hunting with Alessandro of , who led us through the woods with his trustworthy dogs Frida and Viola, then cooked tagliatelle and omelettes with the precious harvest of the day. We enjoyed the farm's shop, which sells seasonal favorites like red fruits, homemade cheeses, piadine (an Italian flatbread), and sfogliate (known as a lobster tail in English). And we had dinner among the vines at , a visionary winery in Fratterosa where we tasted local DOC and IGT wines from autochthonous vines in front of a glass wall that overlooks the country.
